PEARS IN STONE’S GINGER WINE

Preparation time: 5 – 10 minutes,
Cooking time: 40 – 45 minutes,

Serves 8

Ingredients

  • 8 large cooking pears
  • Juice and rind of 1 lemon
  • 375 ml Stone’s Green Ginger wine
  • 1/2 cup of sugar
  • 1/2 teaspoon ground cinnamon
  • 4 Star Anise
  • Mint to garnish

Method

  1. Peel the pears but leave their stalks in place. Brush the fruit with some of the lemon juice to prevent discolouring.
  2. Place all ingredients in large, heavy saucepan or casserole dish. Slowly bring the wine to the boil then reduce the heat to a low simmer for 35 – 40 minutes or until the pears are soft.
  3. Baste the pears from time to time and turn once during cooking. When the pears are soft, remove them to a serving dish, keep warm and decorate the top of each just before serving with mint leaves.
  4. Boil the wine remaining in the saucepan, if necessary, until it is reduced to a syrup consistency. Spoon the syrup over the pears and serve immediately with fresh cream or ice cream.
