STONE’S GREEN GINGER WINE CHOCOLATE AVOCADO PISTACHIO TRUFFLES

Ingredients

Serves: 15 truffles

Truffle mix :

  • 1 cup dark chocolate melted ( either microwave or over a double boiler )
  • 1 Avocado
  • 1 tablespoon cocoa
  • 1 tablespoon Stone’s Green Ginger Wine
  • 3 tablespoons maple syrup
  • 1 pinch sea salt

Garnish :

  • 1 cup green pistachios chopped (  shelled & skins off )

Method

  1. Process in a blender all of the above, then place into a glass bowl and chill in the refrigerator. Chill for at least 1 hr, until the chocolate is firm enough to roll into a ball. You can use a melon baller or just take one tablespoon of mix and roll with your hands into a 2cm ball.  They are gloriously rich so don’t make them too big.
  2. Roll each ball in chopped pistachio, refrigerate until needed.
